Nestled alongside the lake amidst the vineyards of Crittenden Estate, Stillwater restaurant is renowned for its free-­range and regional produce. Complementary to the estate’s wine offering, Stillwater is a destination dining experience.  With a wine-­rich 30 year history, Crittendon Estate was one of the first vignerons established on Victoria’s Mornington Peninsula.

Stillwater required a full restaurant renovation to bring the interiors in line with the quality of the food prepared by chef and proprietor Zac Poulier and wine produced on the estate. The process of making wine and traditional wine materials, especially the wine barrel were central to IF Architecture’s design response. The introduction of timber cladding with brass banding reflective of the wine barrel formalises the refurbished entry and continues within the restaurant space. Polished timber floorboards and a white timber lined ceiling introduce texture, allowing suspended, brass mesh lighting clusters to shine. Rustic basket woven chairs, cork menus and tablecloths create a modern, sophisticated dining experience. A new bar installation with terracotta tiles, brass countertop, angled steel legs and reinforced mesh shelving create a focal point to showcase the estate’s wine selection.
